- Start by cooking your quinoa according to package instructions. Make sure it’s fluffy and completely cooked, and then let it cool for a few minutes.
- In a large mixing bowl, combine the cocoa powder and a pinch of salt. Stir gently to mix.
- In another bowl, whisk together the almond butter, honey or maple syrup, and vanilla extract until smooth.
- Pour the wet mixture into the dry ingredients and mix well. Add the cooled quinoa and fold it gently until thoroughly mixed.
- Toss in the dark chocolate chips and mix them evenly throughout the batter.
- Using your hands, form the mixture into small, bite-sized balls or press them into a lined baking dish to cut into bars later.
- Place the treats in the refrigerator for at least 30 minutes to set—they'll hold their shape better once chilled.

Notes
For a nut-free version, swap the almond butter for sunflower seed butter. Avoid using undercooked quinoa for best texture.
