  1. Start by cooking your quinoa according to package instructions. Make sure it’s fluffy and completely cooked, and then let it cool for a few minutes.
  2. In a large mixing bowl, combine the cocoa powder and a pinch of salt. Stir gently to mix.
  3. In another bowl, whisk together the almond butter, honey or maple syrup, and vanilla extract until smooth.
  4. Pour the wet mixture into the dry ingredients and mix well. Add the cooled quinoa and fold it gently until thoroughly mixed.
  5. Toss in the dark chocolate chips and mix them evenly throughout the batter.
  6. Using your hands, form the mixture into small, bite-sized balls or press them into a lined baking dish to cut into bars later.
  7. Place the treats in the refrigerator for at least 30 minutes to set—they'll hold their shape better once chilled.
