Ingredients
  

Coconut Bar Base
  • 2 cups shredded coconut (unsweetened preferred for less sugar)
  • 1/4 cup coconut oil Melted
  • 1/4 cup honey or maple syrup Ensure Halal compliant
  • 1 teaspoon vanilla extract
Chocolate Coating
  • 1/2 cup dark chocolate chips Seek Halal certified brands

Method
 

Preparation
  1. Line an 8x8 inch baking dish with parchment paper.
  2. In a large mixing bowl, combine shredded coconut, melted coconut oil, honey or maple syrup, and vanilla extract. Stir until well combined and sticky.
  3. Transfer the coconut mixture into the lined baking dish and press down firmly using a spatula or hands.
  4. Place the dish in the refrigerator for about 20-30 minutes to allow the mixture to set.
Coating
  1. Melt dark chocolate chips using a double boiler or microwave (heat in 15-second intervals if using a microwave).
  2. Once the coconut base has set, cut into bars or squares and dip each piece into the melted chocolate, fully coating.
  3. Place the chocolate-covered bars back onto the parchment paper.
  4. Allow the bars to set at room temperature or refrigerate for about 15 minutes until the chocolate hardens.
Enjoy
  1. Once set, enjoy the bars! Store any extras in an airtight container in the fridge.

Notes

These bars can be stored in the refrigerator for up to a week or frozen for up to three months. Enjoy straight from the freezer!
