  • 1 cucumber, diced
  • 2 tomatoes, diced
  • 1 avocado, diced Choose ripe avocados for creaminess.
  • 1/4 medium red onion, finely chopped Be cautious with quantity if not a fan of onion.
Dressing
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • to taste Salt and pepper
Garnish
  • to taste Fresh basil leaves Optional for garnish.

Method
 

Preparation
  1. Wash all your produce thoroughly. Dice the cucumber, tomatoes, and avocado into small, bite-sized pieces. Finely chop the red onion.
Mixing
  1. In a large mixing bowl, gently toss the diced cucumber, tomatoes, avocado, and chopped red onion together.
Dressing
  1. Drizzle the olive oil and lemon juice over the salad. Add a pinch of salt and pepper to taste. Mix carefully until well-coated.
Serving
  1. Sprinkle fresh basil leaves over the top and serve immediately.

Notes

Best served fresh to maintain flavors. For leftovers, store in an airtight container in the refrigerator and consume within 1-2 days.
