  • 2 cups broccoli florets, chopped into small pieces Steam the broccoli briefly before chopping.
  • 1 cup shredded cheddar cheese
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1 teaspoon garlic powder
  • to taste Salt and pepper
  • Olive oil spray For added crispiness.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Steam the broccoli florets for about 3-4 minutes, then chop finely.
  3. In a large mixing bowl, combine the chopped broccoli, shredded cheddar cheese, breadcrumbs, grated Parmesan, egg, garlic powder, and a sprinkle of salt and pepper. Stir until well combined.
  4. Using your hands, take small portions of the mixture and shape into bite-sized balls or patties.
  5. Arrange the shaped bites on a baking sheet lined with parchment paper. Lightly spray with olive oil.
Baking
  1. Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy.
  2. Allow to cool briefly before serving.

Notes

For substitutions, consider using cauliflower or spinach instead of broccoli. Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months.
