  • 4 medium yams or sweet potatoes Peeled and sliced
  • 1 cup brown sugar
  • 1/2 cup butter
  • 1/2 cup maple syrup or honey Use maple syrup for a richer flavor
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • to taste Salt

Method
 

Preparation
  1. Peel the yams or sweet potatoes and slice them into 1/2-inch rounds or chunks.
  2. Arrange the sliced yams in the bottom of the crock pot.
  3. In a separate bowl, combine the brown sugar, butter, maple syrup (or honey), vanilla extract, cinnamon, nutmeg, and a pinch of salt. Stir until smooth.
  4. Pour the mixture over the yams, ensuring they are evenly covered.
Cooking
  1. Cover the crock pot and set it on high for 4 hours or low for 6 hours. Stir occasionally if possible.
  2. About 30 minutes before it’s done, check the consistency. The yams should be tender but not mushy.
Serving
  1. Once cooked, scoop out the yams with a spatula, drizzling any leftover syrup over the top.

Notes

Ensure yam chunks are similar in size for even cooking. Store leftovers in an airtight container in the refrigerator for up to 5 days or freeze for up to 3 months.
