Preparation
- Peel the yams or sweet potatoes and slice them into 1/2-inch rounds or chunks.
- Arrange the sliced yams in the bottom of the crock pot.
- In a separate bowl, combine the brown sugar, butter, maple syrup (or honey), vanilla extract, cinnamon, nutmeg, and a pinch of salt. Stir until smooth.
- Pour the mixture over the yams, ensuring they are evenly covered.
Cooking
- Cover the crock pot and set it on high for 4 hours or low for 6 hours. Stir occasionally if possible.
- About 30 minutes before it’s done, check the consistency. The yams should be tender but not mushy.
Serving
- Once cooked, scoop out the yams with a spatula, drizzling any leftover syrup over the top.
Notes
Ensure yam chunks are similar in size for even cooking. Store leftovers in an airtight container in the refrigerator for up to 5 days or freeze for up to 3 months.
