  • 2 pounds baby potatoes Washed and cut in half
  • 4 tablespoons butter Melted, plus additional if desired
  • 4 cloves garlic, minced Add more if you love garlic!
  • 2 tablespoons fresh parsley, chopped For garnish
  • to taste Salt and pepper Season as desired
  • 1 teaspoon paprika Optional for added flavor

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Cut your washed baby potatoes in half to allow for an even roast.
  3. In a large bowl, combine the halved potatoes with salt, pepper, and paprika (if using). Toss them well to coat all the pieces evenly.
Cooking
  1. Spread the seasoned potatoes evenly on a baking sheet. Pour melted butter evenly over the potatoes, ensuring they are well coated.
  2. Place the baking sheet in your preheated oven and roast for about 25-30 minutes until the potatoes are golden brown and crispy. Shake them halfway through to ensure even cooking.
  3. While the potatoes are roasting, melt additional butter (if desired) in a pan over medium heat and add minced garlic. Sauté until fragrant, about 1 minute.
  4. Once the potatoes are done, transfer them to a large bowl and pour the garlic butter mixture over them. Toss gently to coat.
  5. Finally, sprinkle freshly chopped parsley over the top before serving.

Notes

For extra crispiness, soak the halved potatoes in cold water for about 30 minutes before roasting. Store any leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months.
