Ingredients

For the batter
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon paprika
  • 1 cup cold sparkling water Use cold for a light and crispy texture.
For frying
  • Fish fillets (such as cod or haddock) Feel free to experiment with other fish types that are halal-compliant.
  • Oil for frying

Method

Preparation
  1. Start by patting your fish fillets dry with paper towels to ensure the batter sticks well while frying.
  2. In a large bowl, combine the all-purpose flour, baking powder, salt, and paprika. Gradually whisk in the cold sparkling water until the mixture is smooth and well-combined. It should be thick but pourable.
Cooking
  1. In a deep frying pan or pot, heat oil over medium-high heat until it reaches around 350°F (175°C). You can test the oil by dropping a small amount of batter into it; if it sizzles and rises to the surface, you’re good to go!
  2. Dip each fish fillet into the batter, ensuring it's fully coated. Carefully slide the battered fish into the hot oil, frying in batches to avoid overcrowding. Cook for 3-4 minutes on each side until golden brown and crispy.
  3. Remove the fish using a slotted spoon and let it drain on paper towels. Serve hot with your favorite dipping sauce and sides.

Notes

Use cold sparkling water for the best results. Don't overmix the batter; a few lumps are acceptable. Fry in batches to maintain a consistent oil temperature for perfectly cooked fish.
