  • 1 medium onion, sliced
  • 1 bell pepper sliced (any color you prefer)
  • 1 cup provolone cheese (or cheese of choice) Feel free to substitute with other cheeses.
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper, to taste

Method
 

Cooking the Tortellini
  1. Start by boiling a large pot of salted water. Once the water is at a rolling boil, add the tortellini. Cook according to the package instructions until al dente, usually around 5-7 minutes. Drain and set aside.
Sautéing the Vegetables
  1. In a large skillet, heat the olive oil over medium heat. Add the sliced onions and bell peppers. Sauté them for about 5-7 minutes until they’re tender and caramelized. Toss in the minced garlic and stir for an additional minute.
Adding the Beef
  1. Push the vegetables to the side of the skillet and add the thinly sliced beef to the pan. Cook for about 3-5 minutes, stirring occasionally, until the beef is browned and cooked through.
Combining Ingredients
  1. Add the drained tortellini into the skillet with the beef and vegetables. Stir to combine, ensuring that all ingredients are mingling together.
Melting the Cheese
  1. Sprinkle the provolone cheese over the top of the mixture. Cover the skillet with a lid and allow it to cook for a few minutes until the cheese has melted.
