Preparation
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine the softened cream cheese, chopped spinach, grated parmesan, garlic powder, salt, and black pepper. Mix well until all ingredients are fully incorporated.
Chicken Preparation
- Take each chicken breast and make a pocket by slicing them horizontally, but not all the way through.
- Generously spoon the creamy spinach mixture into each chicken pocket.
Cooking
- In a skillet, heat the olive oil over medium-high heat. Add the stuffed chicken breasts and sear each side for 3-4 minutes, until golden brown.
- Transfer the seared chicken to a baking dish. If using breadcrumbs, sprinkle them on top. Bake for 20-25 minutes or until the chicken is cooked through.
- Once baked, let the chicken rest for a few minutes before slicing into it.
Notes
Substitutions: You can also add sun-dried tomatoes or olives for extra flavor. Use a meat thermometer to ensure chicken reaches 165°F (75°C).
