Ingredients
  

For the Chicken
  • 4 pieces boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1/4 cup breadcrumbs (optional) For a crispy top
For the Filling
  • 2 cups fresh spinach, chopped
  • 1/2 cup cream cheese, softened
  • 1/4 cup grated parmesan cheese Substitute with mozzarella or cheddar if desired
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the softened cream cheese, chopped spinach, grated parmesan, garlic powder, salt, and black pepper. Mix well until all ingredients are fully incorporated.
Chicken Preparation
  1. Take each chicken breast and make a pocket by slicing them horizontally, but not all the way through.
  2. Generously spoon the creamy spinach mixture into each chicken pocket.
Cooking
  1. In a skillet, heat the olive oil over medium-high heat. Add the stuffed chicken breasts and sear each side for 3-4 minutes, until golden brown.
  2. Transfer the seared chicken to a baking dish. If using breadcrumbs, sprinkle them on top. Bake for 20-25 minutes or until the chicken is cooked through.
  3. Once baked, let the chicken rest for a few minutes before slicing into it.

Notes

Substitutions: You can also add sun-dried tomatoes or olives for extra flavor. Use a meat thermometer to ensure chicken reaches 165°F (75°C).
