Preparation
- Preheat your oven to 375°F (190°C).
- In a bowl, combine chopped spinach, cream cheese, mozzarella cheese, garlic powder, salt, and pepper. Mix until well-blended.
- Place the chicken breasts between two pieces of plastic wrap. Use a meat mallet to gently pound each breast to an even thickness, about 1/2 inch thick.
- Spoon a generous amount of the cheese and spinach mixture onto one side of each chicken breast. Carefully roll the chicken up, starting from the cheese-filled edge, and secure with toothpicks if needed.
Cooking
- Heat olive oil in a skillet over medium-high heat. Add the chicken rolls and sear for about 3-4 minutes on each side until golden brown.
- Transfer the seared chicken to a baking dish and bake in the preheated oven for 20-25 minutes until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- Allow to cool slightly before slicing. Serve warm with a side salad or your favorite grain.
Notes
For substitutions, frozen spinach can work if thawed and drained. Ensure even cooking by pounding chicken breasts to a uniform thickness. Use a meat thermometer to check for doneness and avoid dryness. Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 3 months. Reheat in the oven.
