  • 1/4 cup peanut butter or almond butter Substitutions are welcome
  • 1/4 cup maple syrup or honey
  • 1 cup rolled oats Can be swapped for gluten-free oats
  • 1/2 cup chocolate chips Substitute with yogurt-covered raisins or dried fruit if desired
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Preparation
  1. Gather all your ingredients and measure them out for easy access.
  2. In a large mixing bowl, combine the creamy cottage cheese and your chosen nut butter. Use a fork or a spatula to mix until it’s well combined.
  3. Pour in the maple syrup (or honey) and add the vanilla extract. Stir until the mixture is smooth and creamy.
  4. Gradually add the rolled oats to the mixture, folding them in gently. Once well combined, toss in the chocolate chips and give it one last stir.
  5. Definitely taste your cookie dough at this point! Adjust sweetness if necessary by adding a bit more maple syrup or honey.
  6. For a thicker cookie dough texture, consider chilling in the refrigerator for about 30 minutes before serving.

Notes
