  • 1 cup cottage cheese Use low-fat for a lighter version.
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced Fresh garlic for best flavor.
  • 1/4 cup butter
  • 1/2 cup heavy cream For a lighter version, substitute with almond milk or oat milk.
  • 1/2 teaspoon Italian seasoning

Preparation
  1. Start by mincing the garlic and setting aside your cheeses. Gather all ingredients, as this will make the cooking process seamless.
  2. In a medium-sized saucepan, melt the butter over medium heat until it's bubbly and foamy.
  3. Add the minced garlic to the melted butter. Cook it for about 1-2 minutes until fragrant, being careful not to let it burn.
  4. In a blender, combine the cottage cheese, grated Parmesan, and heavy cream. Blend until smooth and creamy.
  5. Pour the blended mixture into the saucepan with the garlic-butter blend. Stir continuously over low heat, allowing the flavors to meld.
  6. Add in salt, pepper, and Italian seasoning to taste. Taste and adjust the seasoning as desired.
  7. Toss the sauce with your choice of pasta or drizzle it over vegetables, and enjoy!

Notes

To keep the sauce fresh, let it cool completely before storing it in an airtight container. It will stay good for up to 3 days in the refrigerator. If freezing, the texture may change slightly after thawing. Reheat gently over low heat, adding a splash of milk or cream if it's too thick.
