- Once hot, add the chicken breasts and cook for about 5-6 minutes on each side until golden brown and cooked through. Remove the chicken and set aside.
- In the same skillet, reduce heat to medium and add the minced garlic and grated ginger. Sauté for 1-2 minutes until fragrant.
- Pour in the coconut milk and lime juice, stirring to combine. Bring to a gentle simmer.
- Return the seared chicken breasts to the skillet, coating them in the sauce. Let it simmer for another 5 minutes.
- Sprinkle with chopped cilantro for freshness before serving.
Notes
You can substitute chicken for turkey or tofu for a vegetarian version. Avoid burning garlic, and be careful not to overcook the chicken to maintain juiciness.
