Preparation
  1. Start by seasoning your chicken breasts with salt and pepper on both sides.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
Cooking
  1. Once hot, add the chicken breasts and cook for about 5-6 minutes on each side until golden brown and cooked through. Remove the chicken and set aside.
  2. In the same skillet, reduce heat to medium and add the minced garlic and grated ginger. Sauté for 1-2 minutes until fragrant.
  3. Pour in the coconut milk and lime juice, stirring to combine. Bring to a gentle simmer.
  4. Return the seared chicken breasts to the skillet, coating them in the sauce. Let it simmer for another 5 minutes.
  5. Sprinkle with chopped cilantro for freshness before serving.

Notes

You can substitute chicken for turkey or tofu for a vegetarian version. Avoid burning garlic, and be careful not to overcook the chicken to maintain juiciness.
