Preparation
- Peel and dice the pears into small pieces. Set them aside.
- Place the dark chocolate into a heatproof bowl. Gently melt it over a pot of simmering water (double boiler method). Stir until smooth and set aside to cool slightly.
- In a separate bowl, whip the heavy cream until soft peaks form. Add the sugar, vanilla extract, and a pinch of salt, and continue whipping until you achieve stiff peaks.
- Carefully fold the melted chocolate into the whipped cream, ensuring you don’t deflate the mixture. The goal here is to keep it light and airy.
Assembly
- In your serving cups, start layering! Begin with a layer of the chocolate mousse, followed by a layer of diced pears. Repeat this process until your cups are filled, finishing with a layer of chocolate.
- Place in the refrigerator for at least 2 hours to set.
- Once set, feel free to garnish with any additional toppings you desire, such as whipped cream, crushed nuts, or a sprinkle of cinnamon, and enjoy!
