  1. Peel and dice the pears into small pieces. Set them aside.
  2. Place the dark chocolate into a heatproof bowl. Gently melt it over a pot of simmering water (double boiler method). Stir until smooth and set aside to cool slightly.
  3. In a separate bowl, whip the heavy cream until soft peaks form. Add the sugar, vanilla extract, and a pinch of salt, and continue whipping until you achieve stiff peaks.
  4. Carefully fold the melted chocolate into the whipped cream, ensuring you don’t deflate the mixture. The goal here is to keep it light and airy.
Assembly
  1. In your serving cups, start layering! Begin with a layer of the chocolate mousse, followed by a layer of diced pears. Repeat this process until your cups are filled, finishing with a layer of chocolate.
  2. Place in the refrigerator for at least 2 hours to set.
  3. Once set, feel free to garnish with any additional toppings you desire, such as whipped cream, crushed nuts, or a sprinkle of cinnamon, and enjoy!
