Ingredients
  

Pasta and Chicken
  • 2 cups cooked pasta (penne or rotini)
  • 1 cup cooked chicken, shredded Can use leftover rotisserie chicken.
Creamy Dressing
  • 1 ripe avocado, mashed Adds creaminess without extra calories.
  • 1/2 cup ranch dressing
Vegetables
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
Seasoning and Garnish
  • Salt and pepper to taste
  • Fresh cilantro or parsley for garnish For a pop of color.

Method
 

Cooking Pasta
  1. Cook the pasta according to the package instructions. Once cooked, drain and rinse with cold water to cool it down.
Preparing Chicken
  1. While the pasta is cooking, take your cooked chicken and shred it using two forks.
Making the Dressing
  1. In a large bowl, combine the mashed avocado and ranch dressing. Mix until you achieve a smooth consistency.
Combining Ingredients
  1. Add the cooled pasta to the bowl with the avocado ranch dressing, followed by the shredded chicken, cherry tomatoes, and diced red onion. Gently fold everything together.
Seasoning and Serving
  1. Taste your salad and add salt and pepper as needed to elevate the flavors.
  2. Garnish with fresh cilantro or parsley for a pop of color and serve immediately, or chill in the refrigerator before serving.
