  • 1 whole whole chicken Approx. 4-5 lbs
  • 1 cup fresh cranberries
  • 1/2 cup maple syrup
  • 2 tablespoons olive oil
  • to taste Salt
  • to taste Pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Rinse the whole chicken under cold water and pat it dry with paper towels.
  3. In a small bowl, mix together the olive oil, salt, pepper, garlic powder, and onion powder. Rub this seasoning mix all over the chicken.
  4. In another bowl, combine the fresh cranberries and maple syrup. Pour this mixture into the cavity of the chicken.
Cooking
  1. Place the chicken breast-side up in a roasting pan.
  2. Pour any remaining cranberry mixture around the chicken in the pan.
  3. Roast for approximately 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C). Baste a couple of times during cooking.
Serving
  1. Remove the chicken from the oven and let it rest for about 10 minutes before carving.

Notes

You can use frozen cranberries without thawing. Honey may be substituted for maple syrup. Ensure to season well and allow resting time for the chicken after cooking.
