Ingredients
  

For the Bites
  • 1 package 1 package of puff pastry (thawed) Thaw before use.
  • 1 wheel 1 wheel of brie cheese Cut into thick slices.
  • 1 cup 1 cup cranberry sauce
  • to taste Fresh rosemary for garnish Optional for garnish.
  • 1 egg Egg wash (1 egg beaten with 1 tbsp water) For brushing the pastries.

Method
 

Preparation
  1. Preheat Oven: Set the oven to 375°F (190°C) to ensure it’s hot and ready for your bites.
  2. Prepare Puff Pastry: Roll out the thawed puff pastry on a lightly floured surface. Cut it into squares, about 3 inches by 3 inches.
  3. Assemble Bites: Place a small spoonful of cranberry sauce in the center of each pastry square, followed by a thick slice of brie on top of the sauce.
  4. Fold: Bring the corners of the puff pastry together to encase the filling completely, and pinch to seal securely.
  5. Brush with Egg Wash: Lay the assembled bites on a baking sheet lined with parchment paper. Brush the tops generously with the egg wash to achieve a beautiful golden-brown finish.
  6. Bake: Place the baking sheet in the preheated oven, and bake for 20 minutes or until the pastry is golden and puffed.
  7. Garnish: Once out of the oven, let them cool for a minute before garnishing with fresh rosemary.
  8. Serve: Present them on a platter and watch them vanish!

Notes

For variations, you can substitute brie with creamy goat cheese or camembert. Bake your bites right before your guests arrive to keep them warm.
