Preparation
- Cook the rice noodles according to the package instructions, usually boiling them for 4–5 minutes until tender. Drain and set aside.
Cooking
- In a large pot over medium heat, add a splash of oil. Once heated, add minced ginger and garlic, swirling them around for about 1 minute.
- Toss in your mixed vegetables and sauté for an additional 2-3 minutes until they’re just tender.
- Pour in the vegetable broth, coconut milk, soy sauce, peanut butter, and lime juice. Stir together and simmer for about 5-7 minutes.
- Add the cooked rice noodles to the pot, stirring gently to ensure they’re fully coated. Simmer for another 2-3 minutes until heated through.
Serving
- Ladle the soup into bowls, and sprinkle with chopped peanuts and fresh cilantro.
