Ingredients
  

Noodles and Base
  • 200 g rice noodles Ensure noodles are cooked per package instructions.
  • 1 cup coconut milk Use full-fat for a creamier texture.
  • 2 tablespoons peanut butter Preferably natural and unsweetened.
  • 2 tablespoons soy sauce Ensure it’s Halal.
  • 1 tablespoon lime juice Fresh is best for flavor.
  • 2 cups vegetable broth Low sodium recommended.
Aromatics and Vegetables
  • 1 teaspoon ginger, minced Fresh ginger for best flavor.
  • 2 cloves garlic, minced Adjust according to taste.
  • 1 cup mixed vegetables (carrots, bell peppers, broccoli) Use fresh or frozen based on availability.
Garnish
  • to taste Chopped peanuts For crunch.
  • to taste Cilantro For freshness.

Method
 

Preparation
  1. Cook the rice noodles according to the package instructions, usually boiling them for 4–5 minutes until tender. Drain and set aside.
Cooking
  1. In a large pot over medium heat, add a splash of oil. Once heated, add minced ginger and garlic, swirling them around for about 1 minute.
  2. Toss in your mixed vegetables and sauté for an additional 2-3 minutes until they’re just tender.
  3. Pour in the vegetable broth, coconut milk, soy sauce, peanut butter, and lime juice. Stir together and simmer for about 5-7 minutes.
  4. Add the cooked rice noodles to the pot, stirring gently to ensure they’re fully coated. Simmer for another 2-3 minutes until heated through.
Serving
  1. Ladle the soup into bowls, and sprinkle with chopped peanuts and fresh cilantro.

Notes
