  • 1 cup cottage cheese Can be substituted with ricotta or Greek yogurt.
  • 4 large eggs Make sure they are fresh for the best texture.
  • 1/2 cup shredded cheese Cheddar or any cheese of your choice.
  • 1/4 cup chopped spinach You can replace with any vegetable of choice.
  • Salt and pepper to taste Season to enhance the flavor.
  • optional chopped herbs (like chives or parsley) For added flavor.

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the cottage cheese, eggs, shredded cheese, and chopped spinach. Season with salt and pepper.
  3. Blend the mixture until smooth and creamy.
  4. Grease a muffin tin or silicone mold with cooking spray or olive oil.
  5. Pour the egg mixture into the prepared muffin tin, filling each cup about 3/4 full.
  6. Bake for 20-25 minutes, until puffy and golden brown.
  7. Allow to cool for a few minutes before removing from the tin. Serve warm.

Notes

Store in an airtight container for up to 5 days in the refrigerator or freeze for up to 3 months. Reheat in the microwave or oven.
