Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the cottage cheese, eggs, shredded cheese, and chopped spinach. Season with salt and pepper.
- Blend the mixture until smooth and creamy.
- Grease a muffin tin or silicone mold with cooking spray or olive oil.
- Pour the egg mixture into the prepared muffin tin, filling each cup about 3/4 full.
- Bake for 20-25 minutes, until puffy and golden brown.
- Allow to cool for a few minutes before removing from the tin. Serve warm.
Notes
Store in an airtight container for up to 5 days in the refrigerator or freeze for up to 3 months. Reheat in the microwave or oven.
