Preparation
- Preheat your oven to 350°F (175°C).
- Grease an 8×8-inch baking dish or line it with parchment paper.
- In a mixing bowl, blend the cottage cheese until smooth.
- Add the sugar, melted butter, eggs, and vanilla extract to the blended cottage cheese, and mix until well combined.
- In another bowl, sift together the cocoa powder, flour, baking powder, and salt.
- Gradually add the dry mixture to the wet ingredients, stirring until just combined.
- Pour the batter into the prepared baking dish and smooth the top with a spatula.
- Bake for 25–30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
- Allow the brownies to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
- Slice into squares, serve, and enjoy!
Notes
Store in an airtight container in the refrigerator for up to a week. For longer storage, freeze in individual portions. Reheat in the microwave for 15–20 seconds.
