  • 1/2 cup sugar
  • 1/4 cup cocoa powder
  • 1/4 cup all-purpose flour
  • 1/4 cup melted butter or melted coconut oil for a lighter option
  • 2 pieces eggs
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease an 8×8-inch baking dish or line it with parchment paper.
  3. In a mixing bowl, blend the cottage cheese until smooth.
  4. Add the sugar, melted butter, eggs, and vanilla extract to the blended cottage cheese, and mix until well combined.
  5. In another bowl, sift together the cocoa powder, flour, baking powder, and salt.
  6. Gradually add the dry mixture to the wet ingredients, stirring until just combined.
  7. Pour the batter into the prepared baking dish and smooth the top with a spatula.
  8. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  9. Allow the brownies to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
  10. Slice into squares, serve, and enjoy!

Notes

Store in an airtight container in the refrigerator for up to a week. For longer storage, freeze in individual portions. Reheat in the microwave for 15–20 seconds.
