Ingredients

Dough Ingredients
  • 1 cup cottage cheese Use regular or low-fat cottage cheese.
  • 1/4 cup butter, softened Must be softened for easy mixing.
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup shredded cheese (cheddar or your preference) Feel free to use any type of cheese.
  • 1 tablespoon dried herbs (oregano, thyme, or basil) Choose your favorite herb or a combination.

Method

Preparation
  1. Preheat your oven to 400°F (200°C) to ensure the perfect crispy texture.
  2. In a large bowl, combine the softened butter and cottage cheese. Stir until the mixture is smooth and creamy.
  3. In a separate bowl, mix the flour, baking powder, and salt.
  4. Gradually add the dry ingredients into the wet mixture, stirring gently until fully combined.
  5. Fold in the shredded cheese and dried herbs until evenly distributed throughout the dough.
  6. Lightly flour a clean surface and turn the dough out. Roll or press it into a rectangular shape about 1/2 inch thick.
  7. Using a pizza cutter or knife, cut the dough into strips—whatever size you prefer.
  8. Place the strips on a parchment-lined baking sheet, spaced apart. Bake for 15-20 minutes, or until golden brown.
  9. Let cool slightly before serving. Enjoy the cheesy goodness while they’re warm!

Notes

You can easily swap out the type of cheese based on your preference. Keep an eye on the oven to avoid over-baking. Don’t over-knead the dough to maintain a soft texture. Store in an airtight container in the refrigerator for up to 3 days or freeze before baking.
