  • 2 tablespoons sugar
  • 1 tablespoon coconut oil or vegetable oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla extract

  1. Preheat your oven to 350°F (175°C), ensuring it's nice and hot for roasting.
  2. Place the raw almonds into a mixing bowl.
  3. In a separate bowl, whisk together the cocoa powder, sugar, salt, and vanilla extract with the oil until smooth.
  4. Pour the cocoa mixture over the almonds and toss until they are well-coated.
  5. Line a baking sheet with parchment paper and spread the coated almonds in a single layer.
  6. Bake the almonds in the preheated oven for about 10-12 minutes, stirring halfway to ensure even roasting. Keep a close eye to prevent burning!
  7. Once they are lightly browned and fragrant, remove them from the oven and let them cool completely before enjoying them.

Notes

Store in an airtight container at room temperature for up to two weeks or refrigerate for a month. For a quick snack, no need to reheat, just enjoy! To restore crunch, pop them in the oven at a low temperature for a few minutes.
