Preparation
- In a large bowl, combine the warm water and active dry yeast. Let it sit for about 5 minutes until frothy.
- Add the flour, 1/4 cup granulated sugar, and salt to the yeast mixture. Stir until a dough begins to form.
- Transfer the dough onto a floured surface and knead for about 5 minutes, or until smooth and elastic.
- Place the dough in a greased bowl, cover with a clean towel, and let it rise in a warm place for about 30 minutes.
Cooking
- Preheat your oven to 425°F (220°C). In a large pot, bring 10 cups of water to a boil, then carefully add 1/4 cup of baking soda.
- Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a long rope and shape it into a pretzel.
- Carefully drop the pretzels into the boiling baking soda solution for 30 seconds, then remove with a slotted spoon and place on a greased baking sheet.
- Brush the tops of the boiled pretzels with melted butter and then sprinkle generously with the cinnamon sugar mixture.
- Bake in the preheated oven for 12-15 minutes, or until golden brown.
