  • 1 cup quinoa Rinsed before cooking
  • 2 cups water or milk Any plant-based option works well
  • 2 apples, diced Any variety you love
  • 1 tablespoon cinnamon
  • 2 tablespoons honey or maple syrup For sweetness
  • 1/4 cup raisins Optional, for chewiness
  • Chopped nuts for topping Optional, think walnuts or almonds

Method
 

Preparation
  1. Rinse the quinoa under cold water in a fine mesh strainer to remove any bitterness.
  2. In a medium saucepan, combine the rinsed quinoa and water or milk, bring to a boil, reduce heat to low, cover, and simmer for about 15 minutes or until all the liquid is absorbed.
  3. While the quinoa cooks, peel and dice the apples into bite-sized pieces.
  4. In a non-stick skillet over medium heat, add the diced apples and a splash of water or butter. Cook for about 5 minutes until softened.
  5. Add the cinnamon and honey (or maple syrup) to the skillet and simmer for another 2-3 minutes.
  6. Mix the softened apples with the fluffy quinoa in a large bowl, stirring in the optional raisins.
  7. Serve hot, garnished with your favorite chopped nuts.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days. To reheat, add a splash of water or milk and microwave for about 30 seconds, stirring halfway through.
