Preparation
- Rinse the quinoa under cold water in a fine mesh strainer to remove any bitterness.
- In a medium saucepan, combine the rinsed quinoa and water or milk, bring to a boil, reduce heat to low, cover, and simmer for about 15 minutes or until all the liquid is absorbed.
- While the quinoa cooks, peel and dice the apples into bite-sized pieces.
- In a non-stick skillet over medium heat, add the diced apples and a splash of water or butter. Cook for about 5 minutes until softened.
- Add the cinnamon and honey (or maple syrup) to the skillet and simmer for another 2-3 minutes.
- Mix the softened apples with the fluffy quinoa in a large bowl, stirring in the optional raisins.
- Serve hot, garnished with your favorite chopped nuts.
Notes
Store leftovers in an airtight container in the refrigerator for up to 4 days. To reheat, add a splash of water or milk and microwave for about 30 seconds, stirring halfway through.
