  • 2 pieces ripe bananas Choose firm but ripe bananas for best results.
  • 1/2 cup peanut butter Can substitute with almond or sunflower seed butter.
  • 1 cup chocolate chips Use dark chocolate for a richer flavor.
  • 1 tablespoon coconut oil Optional; helps achieve a smoother chocolate coating.
  • 1 pinch salt Enhances the flavor of the chocolate.

Preparation
  1. Peel the ripe bananas and slice them into approximately 1/2-inch thick rounds.
  2. Spread a small amount of peanut butter on one slice of banana, then top it with another banana slice to create a mini sandwich. Repeat this with all banana slices.
Coating
  1. In a microwave-safe bowl, combine the chocolate chips and coconut oil (if using). Microwave in 30-second increments, stirring in between, until the chocolate is completely melted and smooth.
  2. Dip each banana sandwich into the melted chocolate, coating it evenly. Dribble chocolate over the bites using a spoon for an artistic look.
  3. Place the chocolate-covered bites on a parchment-lined baking sheet and refrigerate for about 30 minutes, or until the chocolate has hardened.

Notes

Store in an airtight container in the refrigerator for up to a week. For longer storage, freeze them for up to three months. Thaw in the refrigerator or enjoy frozen for a refreshing treat.
