Preparation
- Peel the ripe bananas and slice them into approximately 1/2-inch thick rounds.
- Spread a small amount of peanut butter on one slice of banana, then top it with another banana slice to create a mini sandwich. Repeat this with all banana slices.
Coating
- In a microwave-safe bowl, combine the chocolate chips and coconut oil (if using). Microwave in 30-second increments, stirring in between, until the chocolate is completely melted and smooth.
- Dip each banana sandwich into the melted chocolate, coating it evenly. Dribble chocolate over the bites using a spoon for an artistic look.
- Place the chocolate-covered bites on a parchment-lined baking sheet and refrigerate for about 30 minutes, or until the chocolate has hardened.
Notes
Store in an airtight container in the refrigerator for up to a week. For longer storage, freeze them for up to three months. Thaw in the refrigerator or enjoy frozen for a refreshing treat.
