Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the softened butter and sugar until light and fluffy.
- Add in the eggs one by one, mixing well after each addition, along with the vanilla extract.
- In a separate bowl, whisk together the cocoa powder, flour, baking powder, and salt.
- Gradually add the dry mixture into the wet mixture, stirring until a cohesive dough forms.
- Gently fold in the mini marshmallows and chocolate chips.
- Using a spoon or cookie scoop, drop dollops of dough onto a baking sheet lined with parchment paper, spacing them a couple of inches apart.
- Bake for 12-15 minutes, until the edges look set.
- Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
Notes
To enhance flavor, substitute with dark cocoa powder for a richer taste or replace butter with Halal-friendly margarine if needed. Keep an eye on baking time as ovens can vary.
