Ingredients
  

Dry Ingredients
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
Wet Ingredients
  • 1/2 cup butter, softened Make sure it's at room temperature.
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
Mix-ins
  • 1 cup maraschino cherries, drained and chopped Drained well to avoid excess moisture.
  • 1 cup semisweet chocolate chips

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the all-purpose flour, cocoa powder, baking soda, and salt. Set this mixture aside.
  3. In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add the vanilla extract and egg to the butter mixture and beat until well combined.
  5. Gradually incorporate the dry ingredients into the wet ingredients until just combined.
  6. Gently fold in the chopped maraschino cherries and chocolate chips until they are evenly distributed throughout the dough.
  7. Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, leaving some space between each cookie.
Baking
  1. Bake for 10-12 minutes, or until the edges are set and the centers look slightly underbaked.
  2. After baking, remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

To keep your cookies fresh, store them in an airtight container at room temperature for up to a week. They can be frozen for up to three months as well. Thaw at room temperature or microwave for a few seconds to restore textures.
