Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the all-purpose flour, cocoa powder, baking soda, and salt. Set this mixture aside.
- In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the vanilla extract and egg to the butter mixture and beat until well combined.
- Gradually incorporate the dry ingredients into the wet ingredients until just combined.
- Gently fold in the chopped maraschino cherries and chocolate chips until they are evenly distributed throughout the dough.
- Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, leaving some space between each cookie.
Baking
- Bake for 10-12 minutes, or until the edges are set and the centers look slightly underbaked.
- After baking, remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
To keep your cookies fresh, store them in an airtight container at room temperature for up to a week. They can be frozen for up to three months as well. Thaw at room temperature or microwave for a few seconds to restore textures.
