  • 2 cups Rice Krispie cereal
  • 1/4 cup brown sugar
Wet Ingredients
  • 1/2 cup butter, melted Can be melted in microwave or stovetop.
  • 1 teaspoon vanilla extract
Mix-Ins
  • 1 cup chocolate chips Feel free to substitute with white chocolate or dried fruits.
  • 1 cup mini marshmallows

Method
 

Preparation
  1. Gather all your ingredients and line a baking sheet with parchment paper.
  2. In a large mixing bowl, melt the butter in the microwave or on the stovetop for about 30 seconds to 1 minute.
  3. Add the brown sugar and vanilla extract to the melted butter, stirring well until combined.
  4. Gently fold in the Rice Krispie cereal until evenly coated with the butter mixture.
  5. Stir in the chocolate chips and mini marshmallows until evenly distributed.
  6. Scoop out portions of the mixture and shape them into cookie forms on the prepared baking sheet.
  7. Refrigerate the cookies for about 20 minutes to firm up.
  8. Once cooled, your Chocolate Chip Rice Krispie Cookies are ready to be enjoyed!

Notes

To keep cookies fresh, store in an airtight container at room temperature for up to a week or freeze for a month. Reheat in the microwave for a few seconds.
