- In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering.
- Add the sliced chicken to the skillet. Season with salt and pepper. Stir-fry for about 5-7 minutes, or until the chicken is cooked through and lightly browned.
- Toss in the minced garlic and ginger. Continue to stir-fry for an additional minute, allowing the flavors to infuse the chicken.
- Gradually add the chopped Chinese cabbage to the skillet. Stir-fry for 3-5 minutes, or until the cabbage is tender yet retains some crunch.
- Drizzle the soy sauce over the mixture and toss everything together until evenly coated. Cook for an additional minute.
- Stir in the chopped green onions before removing the skillet from heat. Taste and adjust seasoning as desired with more salt and pepper.
- Transfer the stir-fry to a serving dish and enjoy it hot!
Notes
For variations, if Chinese cabbage is not available, regular cabbage or bok choy can work just as well. To avoid steaming, do not overcrowd the pan; cook the chicken in batches if necessary. Watch the garlic and ginger to prevent burning, as they can become bitter.
