Ingredients
  

For the Chicken and Base
  • 2 pieces chicken breasts, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon shawarma seasoning (Halal-friendly)
  • 1 cup cooked rice or quinoa
  • 1 cup mixed greens (lettuce, spinach, etc.)
For the Toppings
  • 1 piece cucumber, diced
  • 1 piece tomato, diced
  • 1/4 piece red onion, thinly sliced
For the Tahini Dressing
  • 1/4 cup tahini
  • 2 tablespoons lemon juice
  • to taste Salt and pepper

Method
 

Marinate the Chicken
  1. In a bowl, combine the sliced chicken, olive oil, and shawarma seasoning. Toss until the chicken is well coated. Let it marinate for at least 15 minutes.
Cook the Chicken
  1. Heat a non-stick skillet over medium-high heat. Add the marinated chicken and cook for about 6-8 minutes, turning occasionally, until the chicken is browned and fully cooked.
Prepare the Base
  1. While the chicken cooks, arrange the cooked rice or quinoa in bowls, then top with mixed greens.
Prepare the Vegetables
  1. Dice the cucumber and tomato and thinly slice the red onion. Set aside for topping.
Make the Tahini Dressing
  1. In a small bowl, mix tahini, lemon juice, salt, and pepper until well combined. Adjust thickness with water if necessary.
Assemble the Bowls
  1. Once the chicken is cooked, place it on top of the rice or quinoa. Add the diced cucumber, tomato, and red onion. Drizzle the tahini dressing generously.

Notes
