Preparation
- In a large mixing bowl, combine the shredded chicken, mayonnaise, diced celery, and halved red grapes. Stir well until everything is coated with mayonnaise.
- Season the mixture with salt and pepper to taste.
Assembling the Sandwiches
- Slice each croissant in half horizontally, being careful not to cut all the way through.
- Spoon a generous amount of the chicken salad mixture onto the bottom half of each croissant.
- Add fresh lettuce leaves above the chicken salad for an added crunch.
- Close the croissant and repeat the process for all.
Serving
- Serve immediately, or refrigerate them for later enjoyment.
Notes
Store leftover sandwiches in an airtight container in the refrigerator for up to 2 days. For best results, eat fresh as croissants lose flakiness over time. If reheating, do so gently in the oven.
