- In a mixing bowl, place the sliced chicken breast and add the olive oil and fajita seasoning. Mix thoroughly to ensure the chicken is evenly coated.
Cooking
- In a large skillet, heat some olive oil over medium heat. Once hot, add the seasoned chicken. Cook for about 5-7 minutes, stirring occasionally, until it’s browned and fully cooked through.
- Toss in the sliced bell peppers and onions to the skillet with the chicken. Sauté for an additional 3-5 minutes until the veggies are tender but still slightly crisp.
Assembly
- In serving bowls, start with a base of cooked rice, then layer on black beans, corn, the sautéed chicken and veggies mixture, shredded lettuce, sliced avocado, and a generous spoonful of salsa.
- Top each bowl with shredded cheese and squeeze fresh lime juice over everything. Serve warm and enjoy with family!
