Ingredients
  

For the Chicken
  • 1 lb chicken breast, sliced You can substitute with beef or shrimp for different protein options.
  • 1 tablespoon olive oil
  • 1 tablespoon fajita seasoning
For the Bowl
  • 1 cup black beans, drained
  • 1 cup corn Canned or frozen works.
  • 2 cups cooked rice White or brown rice can be used.
  • 1 bell pepper sliced (any color)
  • 1 onion sliced
  • 1 cup shredded lettuce
  • 1 avocado sliced
  • 1/2 cup salsa
  • 1/2 cup shredded cheese Cheddar or a blend.
  • Lime wedges for serving

Method
 

Preparation
  1. In a mixing bowl, place the sliced chicken breast and add the olive oil and fajita seasoning. Mix thoroughly to ensure the chicken is evenly coated.
Cooking
  1. In a large skillet, heat some olive oil over medium heat. Once hot, add the seasoned chicken. Cook for about 5-7 minutes, stirring occasionally, until it’s browned and fully cooked through.
  2. Toss in the sliced bell peppers and onions to the skillet with the chicken. Sauté for an additional 3-5 minutes until the veggies are tender but still slightly crisp.
Assembly
  1. In serving bowls, start with a base of cooked rice, then layer on black beans, corn, the sautéed chicken and veggies mixture, shredded lettuce, sliced avocado, and a generous spoonful of salsa.
  2. Top each bowl with shredded cheese and squeeze fresh lime juice over everything. Serve warm and enjoy with family!

Notes

Feel free to swap chicken for other proteins like Halal-friendly beef or shrimp. Store leftovers in an airtight container for up to 3 days. Reheat in the microwave or stovetop for best texture.
