  • 3 cloves Garlic, minced
  • 1 tbsp Ginger, freshly grated
  • 2 tbsp Vegetable oil
  • Salt, to taste
  • Pepper, to taste

Method
 

Preparation
  1. Start by washing and chopping the bok choy into bite-sized pieces.
  2. Slice the chicken breast into thin strips for quick and easy cooking.
  3. Mince the garlic and grate the ginger.
Cooking
  1. In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering.
  2. Add the chicken strips to the pan, seasoning them with salt and pepper. Stir-fry for about 5-7 minutes, or until the chicken is cooked through and slightly golden.
  3. Toss in the minced garlic and grated ginger to the pan, allowing the aromatic flavors to permeate for about a minute.
  4. Add the chopped bok choy, pouring the soy sauce over everything. Stir well to combine all the ingredients.
  5. Cook for another 3-5 minutes until the bok choy is bright and slightly wilted yet still crisp.
  6. Taste and adjust seasoning as necessary. Once everything is cooked perfectly, remove from heat.

Notes

For variations, swap chicken for diced turkey or firm tofu for a vegetarian twist. Store leftovers in an airtight container in the refrigerator for up to 3 days.
