Preparation
- Preheat your grill to medium-high heat.
- Season the chicken breasts with salt and pepper. Grill each side for about 6-7 minutes or until fully cooked through. Let it rest for at least 5 minutes before slicing it into thin strips.
Salad Assembly
- While the chicken is grilling, wash the mixed greens thoroughly. Slice the cucumber and red onion.
- In a large salad bowl, combine the mixed greens, diced cucumber, sliced red onion, and fresh blueberries. Toss together.
- Place the sliced grilled chicken on top of the salad mix.
- Sprinkle feta cheese on top and drizzle with balsamic vinaigrette. Season with additional salt and pepper if desired, and toss gently.
- Serve and enjoy with crusty bread or as is.
