  • 1 lb grilled chicken breast, sliced Seasoned with salt and pepper
  • 1 cup fresh blueberries Choose ripe blueberries for the best flavor.
  • 4 cups mixed greens (spinach, arugula, etc.) Wash thoroughly before use.
  • 1 cup cucumber, diced Dice into small cubes.
  • 1/2 each red onion, thinly sliced Use the whole onion for additional flavor if desired.
  • 1/2 cup feta cheese, crumbled For a creamier touch.
  • 1/4 cup balsamic vinaigrette Drizzle over the salad.
  • to taste salt and pepper Adjust according to preference.

Preparation
  1. Preheat your grill to medium-high heat.
  2. Season the chicken breasts with salt and pepper. Grill each side for about 6-7 minutes or until fully cooked through. Let it rest for at least 5 minutes before slicing it into thin strips.
Salad Assembly
  1. While the chicken is grilling, wash the mixed greens thoroughly. Slice the cucumber and red onion.
  2. In a large salad bowl, combine the mixed greens, diced cucumber, sliced red onion, and fresh blueberries. Toss together.
  3. Place the sliced grilled chicken on top of the salad mix.
  4. Sprinkle feta cheese on top and drizzle with balsamic vinaigrette. Season with additional salt and pepper if desired, and toss gently.
  5. Serve and enjoy with crusty bread or as is.

Notes

Store leftovers in an airtight container in the refrigerator for up to 2 days. Keep the dressing separate to maintain freshness.
