Preparation
  1. Start by dicing the chicken breasts into bite-sized pieces.
  2. In a large skillet or wok, heat 2 tablespoons of olive oil over medium-high heat.
Cooking
  1. Once the oil is shimmering, add the diced chicken to the pan. Season with salt and pepper.
  2. Stir-fry for about 5-7 minutes until the chicken is golden and cooked through.
  3. Add minced garlic and ginger to the pan, sautéing for 1-2 minutes until fragrant.
  4. Toss in the sliced zucchini and pour in the soy sauce.
  5. Stir-fry for another 3-5 minutes until the zucchini is tender but still slightly crisp.
  6. Once everything is well-combined and cooked, taste and adjust the seasoning if necessary.
