Preparation
- Preheat your oven to 350°F (175°C) to ensure even baking.
- In a bowl, whisk together the flour, ginger, cinnamon, baking soda, and salt. Set this mixture aside.
- In a large bowl, use a hand mixer to cream the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
- Add the egg, molasses, and vanilla to the butter mixture and mix until well combined.
- Slowly incorporate the flour mixture into the wet ingredients until just combined. Be careful not to overmix.
Baking
- Use a cookie scoop or a tablespoon to drop dough onto a parchment-lined baking sheet, about 2 inches apart.
- Bake for 8-10 minutes or until the edges are set but the center looks slightly underbaked.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
Chill the dough for about an hour before baking for enhanced flavor and texture. Feel free to add nutmeg or allspice for extra flavor. Keep an eye on your cookies; they should look slightly underbaked when you take them out.
