Preparation
  1. Preheat your oven to 350°F (175°C) and lightly grease a 9x13 inch casserole dish.
  2. Prepare the rice according to package instructions using the beef or chicken broth instead of water for added flavor.
  3. In a large skillet over medium heat, add the ground beef or turkey. Cook until fully browned, breaking it apart with a spoon, which should take about 5-7 minutes.
  4. Drain any excess fat if needed, and add the taco seasoning to the meat. Stir to combine thoroughly and let the flavors meld for another 2-3 minutes.
  5. To the cooked meat, add the drained black beans, corn, salsa, and cooked rice. Mix until all ingredients are combined and well-coated with salsa.
  6. Pour this mixture into the greased casserole dish, and spread it out evenly.
  7. Top it all off with the shredded cheese, making sure to cover the entire surface for maximum cheesy goodness.
  8. Place the casserole in the preheated oven and bake for about 20-25 minutes, or until the cheese is melted and bubbly.
