- In a large skillet over medium heat, add the ground beef. Brown it until fully cooked, breaking it apart with a spatula. Drain any excess fat if necessary.
- Add the taco seasoning to the cooked beef, along with a splash of water if it’s too dry. Stir well to coat, and let simmer for about 5 minutes to deepen the flavor.
- In a large mixing bowl, combine the cooked pasta, seasoned beef, cheddar cheese, cherry tomatoes, corn, black beans, bell pepper, red onion, and cilantro. Toss everything together until all ingredients are evenly mixed.
Finishing Touches
- Stir in the sour cream and salsa, adjusting the amounts to suit your taste. Season with salt and pepper as needed.

Notes
Feel free to swap out beef for lean ground turkey or chicken for a lighter version. For a vegetarian option, replace the meat with sautéed mushrooms or extra beans. Remember to rinse the pasta to prevent it from becoming mushy.
