Ingredients
  

Pasta and Beef
  • 8 oz pasta Use your favorite type of pasta.
  • 1 lb ground beef Can substitute with lean ground turkey or chicken.
  • 1 packet taco seasoning
Vegetables and Cheese
  • 1 cup cheddar cheese, shredded
  • 1 cup cherry tomatoes, halved Adds a fresh crunch.
  • 1 cup corn, canned or frozen
  • 1 cup black beans, drained and rinsed
  • 1/2 cup bell pepper, chopped Any color bell pepper works.
  • 1/4 cup red onion, diced
  • 1/4 cup cilantro, chopped For a refreshing flavor.
Sauces and Seasoning
  • 1/2 cup sour cream
  • 1/2 cup salsa
  • Salt and pepper To taste.

Method
 

Preparation
  1. Begin by bringing a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until it’s al dente. Drain and rinse with cold water, setting aside.
  2. In a large skillet over medium heat, add the ground beef. Brown it until fully cooked, breaking it apart with a spatula. Drain any excess fat if necessary.
  3. Add the taco seasoning to the cooked beef, along with a splash of water if it’s too dry. Stir well to coat, and let simmer for about 5 minutes to deepen the flavor.
  4. In a large mixing bowl, combine the cooked pasta, seasoned beef, cheddar cheese, cherry tomatoes, corn, black beans, bell pepper, red onion, and cilantro. Toss everything together until all ingredients are evenly mixed.
Finishing Touches
  1. Stir in the sour cream and salsa, adjusting the amounts to suit your taste. Season with salt and pepper as needed.
  2. Enjoy immediately, or refrigerate for about 30 minutes for the flavors to meld beautifully!

Notes

Feel free to swap out beef for lean ground turkey or chicken for a lighter version. For a vegetarian option, replace the meat with sautéed mushrooms or extra beans. Remember to rinse the pasta to prevent it from becoming mushy.
