Cheesy Layered Taco Casserole

Ingredients
  

Main Ingredients
  • 1 lb ground beef Can be substituted with ground chicken or turkey.
  • 1 packet taco seasoning Add water as needed based on packet instructions.
  • 1 can refried beans
  • 1 can diced tomatoes with green chilies Drain excess liquid if necessary.
  • 1 cup corn (frozen or canned)
  • 2 cups shredded cheddar cheese Divided into layers.
  • 1 cup salsa Divided into layers.
  • 12 pieces corn tortillas
  • to taste chopped green onions (for garnish)

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet over medium heat, brown the ground beef until fully cooked, about 5-7 minutes.
  3. Drain excess fat from the skillet and add the taco seasoning to the beef, stirring to combine.
  4. In a baking dish, spread a layer of refried beans on the bottom.
  5. Layer four corn tortillas, followed by half of the seasoned beef, corn, diced tomatoes, salsa, and one cup of cheddar cheese.
  6. Repeat with another set of four tortillas, the remaining beef, half of the salsa, and another cup of cheese.
  7. Finish with the last four tortillas on the top, spread the remaining salsa and the last cup of cheddar cheese.
Baking
  1. Cover the dish with aluminum foil and bake for 30 minutes.
  2. Remove the foil and bake for an additional 5-10 minutes, until the cheese is bubbly and golden.
Serving
  1. Garnish with chopped green onions and let cool for a few minutes before serving.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3-4 days. For longer storage, freeze tightly wrapped for up to 2 months. Reheat in the oven at 350°F (175°C) for 20-30 minutes.
