Preparation
- Preheat the oven to 350°F (175°C).
- In a large skillet over medium heat, brown the ground beef until fully cooked, about 5-7 minutes.
- Drain excess fat from the skillet and add the taco seasoning to the beef, stirring to combine.
- In a baking dish, spread a layer of refried beans on the bottom.
- Layer four corn tortillas, followed by half of the seasoned beef, corn, diced tomatoes, salsa, and one cup of cheddar cheese.
- Repeat with another set of four tortillas, the remaining beef, half of the salsa, and another cup of cheese.
- Finish with the last four tortillas on the top, spread the remaining salsa and the last cup of cheddar cheese.
Baking
- Cover the dish with aluminum foil and bake for 30 minutes.
- Remove the foil and bake for an additional 5-10 minutes, until the cheese is bubbly and golden.
Serving
- Garnish with chopped green onions and let cool for a few minutes before serving.
Notes
Leftovers can be stored in an airtight container in the fridge for up to 3-4 days. For longer storage, freeze tightly wrapped for up to 2 months. Reheat in the oven at 350°F (175°C) for 20-30 minutes.
