  • 1 cup onion, chopped Use sweet onion for a milder flavor.
  • 1 cup bell pepper, chopped Any color bell pepper works.
  • 1 can (14.5 oz) diced tomatoes Do not drain.
  • 1 cup beef broth Low sodium if preferred.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt Adjust to taste.
  • 1/2 teaspoon black pepper Freshly ground for best flavor.
For the Biscuit Topping
  • 1 package Cheddar Bay Biscuit mix Follow package instructions.
  • 1 cup shredded cheddar cheese Use sharp cheddar for a more robust flavor.

Method

Preparation
  1. Preheat your oven to 350°F (175°C).
Cooking the Beef Filling
  1. In a large skillet over medium heat, add the ground beef and brown it until cooked through. Strain any excess grease if necessary.
  2. Add the chopped onion and bell pepper to the skillet, cooking until they soften, around 5-7 minutes.
  3. Stir in the can of diced tomatoes (with juices), beef broth, garlic powder, onion powder, salt, and black pepper. Allow the mixture to simmer for about 5 minutes so the flavors meld together.
Biscuit Topping
  1. While the beef mixture simmers, prepare the Cheddar Bay Biscuit mix according to package instructions.
Assembling and Baking
  1. Transfer the beef mixture into a greased 9×13-inch baking dish.
  2. Spoon the biscuit mixture over the beef filling, ensuring an even distribution.
  3. Sprinkle a generous layer of shredded cheddar cheese on top.
  4. Place the dish in the preheated oven and bake for 25-30 minutes, or until the biscuit topping is golden brown and cooked through.
Serving
  1. Allow the cobbler to cool for a few minutes before serving.

Notes

For a Halal-friendly option, ensure you’re using Halal-certified ground beef. For a lighter alternative, consider substituting ground turkey or chicken. Keep an eye on the biscuit topping to avoid overcooking.
