Main Ingredients
  • 2 cups rolled oats
  • 1 cup shredded carrots (fresh, not canned)
  • 1/2 cup nuts (walnuts or pecans) Can substitute with other nuts.
  • 1/2 cup raisins or dried cranberries Ensure halal certification if needed.
  • 1/4 cup honey or maple syrup
  • 1/4 cup coconut oil (melted) Ensure it's melted for easier mixing.
  • 1 teaspoon cinnamon Adjust according to taste.
  • 1/2 teaspoon nutmeg Adjust according to taste.
  • 1/4 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the melted coconut oil and honey (or maple syrup). Stir until well blended.
  3. Incorporate the shredded carrots, cinnamon, nutmeg, and salt into your wet mixture. Stir until well coated.
  4. In a separate bowl, mix rolled oats and nuts together.
  5. Pour the wet mixture over the dry ingredients and mix until all oats and nuts are coated evenly.
  6. Line a baking sheet with parchment paper and spread the granola mixture onto it.
  7. Bake in the preheated oven for about 25 minutes or until golden brown, stirring halfway through.
  8. Once done, remove from oven and let it cool completely. Mix in the raisins or dried cranberries.
  9. Store in an airtight container to keep fresh.

Notes

Your homemade granola can be stored in an airtight container at room temperature for up to two weeks. It can be frozen for up to three months. No need to reheat – enjoy it straight from the jar or over yogurt!
