Preparation
- Preheat your oven to 350°F (about 175°C). Grease a 9x13 inch baking pan or line it with parchment paper.
- In a large mixing bowl, combine the granulated sugar, brown sugar, and vegetable oil. Mix until well blended.
- Add the eggs one at a time, stirring well after each addition, followed by the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt. Gradually stir the dry ingredients into the wet ingredients.
- Fold in the grated carrots and walnuts or pecans if using, until just combined.
- Pour the batter into the prepared baking pan, spreading it evenly with a spatula.
Baking
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
- Frost with cream cheese frosting if desired before serving.
Notes
These bars are best stored in an airtight container. Refrigerate for up to a week, or freeze for up to three months. To reheat, allow to thaw at room temperature or microwave for 20-30 seconds.
