Ingredients

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cardamom
Wet Ingredients
  • 1/2 cup unsalted butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream Can be substituted with plain yogurt.

Method

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan or line it with parchment paper for easy removal later.
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and ground cardamom. Set aside.
  3. In a large mixing bowl, beat the softened unsalted butter and sugar together until light and fluffy, about 2-3 minutes.
  4. Add the eggs one by one, mixing well after each addition. Follow with the vanilla extract.
  5. Gradually blend in the dry ingredients, alternating with the sour cream, starting and ending with the dry ingredients. Mix until just combined without overmixing.
  6. Transfer the batter into your prepared cake pan, smoothing out the top.
Baking
  1. Place the cake pan in the preheated oven and bake for about 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  2. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack.
Serving
  1. Once cooled, dust with powdered sugar if desired, and slice into pieces. Enjoy your Cardamom Coffee Cake warm or at room temperature.

Notes

Keep an eye on the cake as it bakes, since ovens can vary. Storing tips: Keep at room temperature for up to 3 days in an airtight container, or refrigerate for up to a week. For longer storage, freeze wrapped slices for up to 3 months.
