Preparation
- Season the chicken breasts evenly with Cajun seasoning.
- Boil water in a large pot and cook the pasta according to package instructions until al dente. Reserve about 1 cup of pasta water before draining.
Cooking
- In a large skillet over medium heat, add olive oil. Once hot, add the seasoned chicken breasts and sear for about 5-7 minutes on each side until golden brown. Remove and let rest.
- In the same skillet, add sliced bell pepper and onion. Sauté for about 5 minutes until softened, then add minced garlic and cook for another minute.
- Lower the heat, pour in heavy cream, and stir continuously. Add grated Parmesan cheese and stir until melted and creamy. If too thick, add reserved pasta water to desired consistency.
- Slice the chicken into strips, return to the skillet, and add drained pasta. Toss everything until well combined and season with salt and pepper.

Notes
For lighter options, consider using chicken thighs or shrimp. Refrigerate leftovers in an airtight container for up to 3 days or freeze for up to 2 months. Reheat with a splash of cream or pasta water.
