  • 1 cup finely chopped pecans Use finely chopped for best texture.
  • 1/4 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream the softened unsalted butter and powdered sugar together until smooth and fluffy, about 3-5 minutes.
  3. Add the vanilla extract to your butter mixture and mix until well combined.
  4. In a separate bowl, combine the flour, salt, and finely chopped pecans.
  5. Gradually add the dry mixture to the wet ingredients, mixing until just incorporated.
  6. Scoop out tablespoon-sized portions of dough and roll them into balls. Place these onto a parchment-lined baking sheet.
Baking
  1. Bake for 12-15 minutes or until slightly golden at the edges.
  2. Roll the warm cookies in powdered sugar once they're out of the oven.
  3. Allow them to cool completely on a wire rack before rolling in powdered sugar again.

Notes

Alternatives: Use coconut oil instead of butter for a different flavor. Watch baking time closely as ovens vary.
