Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, cream the softened unsalted butter and powdered sugar together until smooth and fluffy, about 3-5 minutes.
- Add the vanilla extract to your butter mixture and mix until well combined.
- In a separate bowl, combine the flour, salt, and finely chopped pecans.
- Gradually add the dry mixture to the wet ingredients, mixing until just incorporated.
- Scoop out tablespoon-sized portions of dough and roll them into balls. Place these onto a parchment-lined baking sheet.
Baking
- Bake for 12-15 minutes or until slightly golden at the edges.
- Roll the warm cookies in powdered sugar once they're out of the oven.
- Allow them to cool completely on a wire rack before rolling in powdered sugar again.
Notes
Alternatives: Use coconut oil instead of butter for a different flavor. Watch baking time closely as ovens vary.
