Bruschetta Grilled Cheese Sandwich

Ingredients
  

For the bruschetta mixture
  • 2 cups tomatoes, diced
  • 1/4 cup fresh basil, chopped
  • 2 cloves garlic, minced
  • 1/4 cup balsamic vinegar
  • Olive oil For drizzling and grilling
  • Salt and pepper to taste Salt and pepper, to taste
For the sandwich
  • 8 slices bread Italian or French bread works best
  • 4 oz mozzarella cheese, sliced Can substitute with provolone or gouda

Method
 

Preparation
  1. Start by dicing the tomatoes and mincing the garlic. Chop the basil, and combine these three in a bowl.
  2. Add balsamic vinegar, olive oil, and a pinch of salt and pepper to the mixture for that burst of flavor.
Assembly
  1. Lay out four slices of bread, and place a generous slice of mozzarella cheese on each.
  2. Spoon your bruschetta mixture on top of the cheese, then add another slice of mozzarella before topping with another slice of bread.
Cooking
  1. Heat a non-stick skillet over medium heat and drizzle a bit of olive oil.
  2. Add the sandwiches and grill them for about 3-4 minutes on one side until golden brown.
  3. Carefully flip the sandwiches and grill them on the other side until the cheese is melted and the bread is crispy, another 3-4 minutes.
Serving
  1. Once done, remove from the skillet, cut in half (if you dare), and serve warm.

Notes

Store leftovers in the refrigerator for up to 2 days, wrapped tightly. Reheat in a skillet on low heat or in a toaster for a quicker option.
