Preparation
- Start by dicing the tomatoes and mincing the garlic. Chop the basil, and combine these three in a bowl.
- Add balsamic vinegar, olive oil, and a pinch of salt and pepper to the mixture for that burst of flavor.
Assembly
- Lay out four slices of bread, and place a generous slice of mozzarella cheese on each.
- Spoon your bruschetta mixture on top of the cheese, then add another slice of mozzarella before topping with another slice of bread.
Cooking
- Heat a non-stick skillet over medium heat and drizzle a bit of olive oil.
- Add the sandwiches and grill them for about 3-4 minutes on one side until golden brown.
- Carefully flip the sandwiches and grill them on the other side until the cheese is melted and the bread is crispy, another 3-4 minutes.
Serving
- Once done, remove from the skillet, cut in half (if you dare), and serve warm.
Notes
Store leftovers in the refrigerator for up to 2 days, wrapped tightly. Reheat in a skillet on low heat or in a toaster for a quicker option.
