  • 2 cups cooked chicken, shredded Grilled or rotisserie.
  • 1 cup diced tomatoes Fresh for best flavor.
  • 1/4 cup chopped fresh basil Can substitute with dried herbs if fresh is unavailable.
  • 2 cloves garlic, minced Adds aromatic flavor.
  • 1/4 cup balsamic vinegar Provides a tangy flavor.
  • 1/4 cup olive oil For mixing and drizzling.
  • to taste Salt and pepper For seasoning.
  • Grated for serving Parmesan cheese For topping when serving.

Preparation
  1. In a large pot, boil water and add a pinch of salt. Cook your pasta according to package instructions until al dente. Drain and set aside.
  2. While the pasta is cooking, shred your cooked chicken. If it’s leftover from another meal, it’s perfect for this dish!
  3. In a mixing bowl, combine diced tomatoes, fresh basil, minced garlic, and balsamic vinegar with a splash of olive oil. Season with salt and pepper to your taste. This will be your bruschetta topping.
  4. In a large serving bowl, mix the cooked pasta and shredded chicken. Gently fold in your bruschetta mixture until everything is evenly coated.
  5. Finish with a generous sprinkle of grated Parmesan cheese.
