Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the softened butter and brown sugar until light and fluffy for about 2-3 minutes.
- Add in the egg and vanilla extract, mixing until fully combined.
- In another bowl, whisk together the all-purpose flour, baking soda, salt, ground cinnamon, and nutmeg (if using).
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Drop rounded portions of dough onto a lined baking sheet, leaving about 2 inches between cookies.
Baking
- Bake for 10-12 minutes or until the edges are set and lightly golden.
- Let cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
Store cookies in an airtight container at room temperature for up to one week, or freeze in a resealable bag for up to three months. To enjoy, thaw or microwave for 10-15 seconds.
