  • 2 cups all-purpose flour Can substitute half with whole wheat flour.
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon ground cinnamon Key flavor component.
  • 1/4 teaspoon nutmeg Optional ingredient for added warmth.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter and brown sugar until light and fluffy for about 2-3 minutes.
  3. Add in the egg and vanilla extract, mixing until fully combined.
  4. In another bowl, whisk together the all-purpose flour, baking soda, salt, ground cinnamon, and nutmeg (if using).
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Drop rounded portions of dough onto a lined baking sheet, leaving about 2 inches between cookies.
Baking
  1. Bake for 10-12 minutes or until the edges are set and lightly golden.
  2. Let cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to one week, or freeze in a resealable bag for up to three months. To enjoy, thaw or microwave for 10-15 seconds.
