Method
Cooking the Pasta
- Begin by bringing a large pot of salted water to a boil. Add your pasta and cook according to the package instructions, usually around 8-10 minutes, until al dente.
Preparing the Broccoli
- In the last 3-4 minutes of cooking, add the broccoli florets to the pot with the pasta. This ensures they become bright green but still crunchy.
Sautéing the Garlic and Chickpeas
- While the pasta and broccoli are cooking, heat the olive oil in a skillet over medium heat. Add the minced garlic, cooking for about 30 seconds until fragrant. Then, add the chickpeas, cooking for another 2-3 minutes. Season with salt and pepper.
Combining Ingredients
- Once the pasta and broccoli are done, drain them and add them straight to the skillet with the chickpeas and garlic. Toss everything together to coat evenly.
Serving the Dish
- Plate your Broccoli Chickpea Pasta and, if desired, top with a sprinkle of Parmesan cheese. Serve warm!
Notes
You can use whole wheat or gluten-free pasta to suit dietary preferences. Adding red pepper flakes can give the dish a delightful kick. Be sure not to overcook the broccoli to maintain a perfect texture contrast. Remember to salt the water when cooking pasta.
