  • 2 cups rolled oats
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
Wet Ingredients
  • 2 ripe apples, grated
  • 1/2 cup honey or maple syrup For sweetness
  • 1/4 cup olive oil or coconut oil
  • 4 large eggs
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and prepare an 8-inch square baking dish by greasing it lightly with oil or lining it with parchment paper.
  2. In a large mixing bowl, combine the rolled oats, baking powder, cinnamon, and salt. Stir well to ensure even mixing.
  3. In another bowl, whisk together the grated apples, honey or maple syrup, olive or coconut oil, eggs, and vanilla extract until well combined.
  4. Pour the wet mixture into the bowl with the dry ingredients and mix gently with a spatula until just combined.
Baking
  1. Pour the mixture into the prepared baking dish and spread it evenly. Bake for 25-30 minutes, or until the cake is golden and a toothpick inserted in the center comes out clean.
Cooling and Serving
  1. Allow the cake to cool in the pan for at least 10 minutes before cutting it into squares. Serve warm and enjoy!

This cake is versatile and can be topped with yogurt, honey, or nut butter. It stores well in the fridge or can be frozen for later use.
