Preparation
- Preheat the oven to 350°F (175°C) and prepare an 8-inch square baking dish by greasing it lightly with oil or lining it with parchment paper.
- In a large mixing bowl, combine the rolled oats, baking powder, cinnamon, and salt. Stir well to ensure even mixing.
- In another bowl, whisk together the grated apples, honey or maple syrup, olive or coconut oil, eggs, and vanilla extract until well combined.
- Pour the wet mixture into the bowl with the dry ingredients and mix gently with a spatula until just combined.
Baking
- Pour the mixture into the prepared baking dish and spread it evenly. Bake for 25-30 minutes, or until the cake is golden and a toothpick inserted in the center comes out clean.
Cooling and Serving
- Allow the cake to cool in the pan for at least 10 minutes before cutting it into squares. Serve warm and enjoy!
